What are Microgreens?
Microgreens are miniature versions of fully grown vegetables, such as broccoli, pea, sunflower, and radish. Typically they are harvested right before their first true leaf emerges, at their most tender and nutritious stage of growth. Below illustrates what microgreens are compared to sprouts and fully grown vegetables. On the left are sprouts. On the right is a more mature plant. In the middle is the microgreen stage, when it is most tender, nutritious, and delicious!
